We discovered the perfect PARTY SALAD
The fine dining restaurant at Vaalnest Boutique Hotel at Vaal Marina, Vaal Dam, has become one of the fine dinging restaurants of choice in the Vaal Dam area and Vereeniging district. Our guests enjoy the good food as well as our luxurious rooms. (Ideal for a romantic break away to the Vaal Dam!) We decided to share a few recipes from our personal collections. This one is ideal for a party.
3 cups shredded lettuce
1 ½ cups cooked pasta shells
3 hard-cooked eggs, sliced
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups shredded cooked chicken breast mixed with ½ cup chutney
2 cups unfrozen peas
1 cup mayonnaise
1/4 cup sour cream
1 cup spring onions chopped
2 teaspoons Dijon mustard
1 cup of grated cheese (any kind)
2 tablespoons chopped fresh parsley
• Place the lettuce in a deep glass serving bowl; top with pasta and eggs. Sprinkle with salt and pepper. Layer with chicken and peas.
• In a small bowl, mix dressing ingredients until blended; spread over top. Refrigerate, covered, for several hours or overnight.
• Just before serving, sprinkle with cheese and parsley.
